Beire de Coupage
Birds of a Feather is “Bière de Coupage” which means the “process of blending old and young beer together”. Built on a classic Saison recipe, it’s open-fermented with our own house culture and blended with barrel-aged Saison with greengages (a sweet green fruit that looks a bit like a plum) and 3-year-old barrel-aged sour beer.
