Marble — Guillotine
Brut IPA
The seventh beer in our 2018 hop-forward series, Guillotine is a brut IPA, a style that has recently emerged from the San Francisco bay area. This style uses extra amylase enzymes to promote a more complete fermentation of the sugars from the malt, giving a beer that is completely dry, hence the name (“brut” being a designation for the driest sparkling wine). To enhance the vinous character we have used Hallertau Blanc, Huell Melon, Nelson Sauvin & Motueka hops, giving tangy white grape and tropical fruit notes.
