Northern Monk — Patrons Project 15.03 // Lucy Ketchin // Wizard Brewing // Lady of the Sunshine
Pineapple, Papaya, Mango, Citra BBC and Milk Sugar Sour IPA
For the third beer in our series of fruited, Florida-inspired sour IPAs with patron Lucy Ketchin, we teamed up with Wizard; a collaborative brewing operation between Nik (Mikrofonbryggeriet) and Jonas (Morgondagens) based in Gothenburg, Sweden.
Wizard specialize in ultra-fruity sours, something we were more than happy to go along and experiment with! After much discussion back and forth we decided we wanted to go down the tropical fruit route, 240g/l of pureed fruit to be exact.
The beer has a New England IPA base of wheat and oats for mouthfeel, which we backed up by milk sugar. The wort was kettle-soured overnight before adding a generous helping of Citra BBC in the whirlpool. We then hit the beer with multiple barrels of pineapple, mango and papaya mid-fermentation, all finished off with a touch of vanilla, and plenty more Citra BBC in the dry hop to add another layer of vibrant tropical flavour.
