NOT FOR MAILORDER – This is a blended culture fermentation – our house mixed culture and a belgian pale ale strain. Lots of bittering hops to suppress the lacto and pedio, and prevent it getting too tart. Dry, bitter, belgian esters, fruity hops. We fermented this in our foudre. The foudre and our mixed culture will both have a lot of brett in them, so interesting to see how this develops. Right now it feels like a Belgian Pale ale, dry, peppery with a lovely texture (perhaps the fermentation in foudre?). There is not much sugar left to fuel any further fermentation, but I’d advise to drink fresh
