This 5.8% IPA uses whole British gooseberries in the boil and gooseberry puree after fermentation to give the beer a fruit tartness and crisp finish. Using UK hops, Ernest and Olicana, for florality and earthiness, alongside the punchier fruity notes from Citra and Mosaic and Lallemand’s New England yeast strain, this trans-Atlantic take on an IPA is complex yet clean.
