Dig — Mount Rainier
New England IPA
Similar to Project Green Book this New England style IPA has been hopped with a combination of USA (Mosaic), AUS (Enigma) and British (Ernest) hops.
Taking findings we have learned during our “Studio Z” projects in which we have been experimenting with the use of exclusively British hops we decided it was time we started using these experimental varieties along side the biggest and best in the industry.
Ernest, used here with the giants that are Mosaic and Enigma, is actually a very old British hop that fell out of use int he 1960s, supposedly for being too fruity! A flavour profile that is massively back in fashion now.
Previously we have used a lot of Ernest in the hot side of our processes – using it as a whirlpool hop addition in Waka/Jawaka and Big Swifty recipes but here it is also used in a big way as a dry hop.
Very exciting beer and doubly so because of these hops.
