Since we’re so confident with our pale and hazy output here at Polly’s, we thought why not turn to the old school and focus a bit of attention on those big brash bitter IPAs we grew up drinking? Monstercat has gone through several iterations since its inception nearly three years ago; upping the abv, adding a pyramid hop charge, but we’ve gone back to basics for our latest effort. Throwing the pyramid technique out of the window, we’ve decided to reel the hop bill on this beer back to a simple Simcoe and Columbus pairing, this beer purposely accentuates each hop varietal, displaying the awesome resinous, piney, earthy notes that each bring to the table, offsetting the biscuit sweetness of the malt. To quote our notoriously fussy head of sales himself, “Lads, this is a pretty special beer; well done”. There we have it.
